Clay that breathes
The qvevri is more than a vessel - it is a whole philosophy of winemaking: earth, clay, time and patience. We descend into the marani (cellar), where wine gains its unique character and energy deep within the earth.

During the grape harvest, the freshly picked grapes are placed in a satsnakheli - a traditional winepress carved from a single log and shaped like a boat.
Pressing
The grapes are trodden by foot in the satsnakheli. The must runs down a channel into the qvevri.
With the chacha
The chacha - skins, seeds and often stems - follows the must into the qvevri.

The wine ferments with its own wild yeasts. The cap of skins that rises to the top is punched down several times a day.
Sealing
After fermentation the qvevri is closed with a lid and sealed with clay. The wine rests for months in the silence of the earth.
Amber wine
White grapes left on their skins for months give a wine of deep, warm amber.
What is a qvevri
A qvevri is a large, egg-shaped clay vessel with a pointed base. The potter builds it by hand, coil by coil - sometimes over several weeks - then dries it and fires it in a kiln for days. While still hot from the firing, its inside is lined with beeswax.
In the marani the qvevri is buried in the ground up to its neck. The earth keeps it at a steady, cool temperature, while the egg shape helps the wine circulate naturally as it ferments. A qvevri may hold anything from a few dozen litres to several thousand.
Qvevri-making is passed down within families from generation to generation. Especially renowned are the villages of Imereti - Makatubani, Shrosha, Tkemlovana - and Vardisubani in Kakheti.

The grapes are crushed in a wooden or stone trough - traditionally by foot. The must flows down towards the qvevri.
Together with the chacha
The must goes into the qvevri together with the chacha - skins, seeds and often stems. In the Kakhetian style all of it stays; in the Imeretian style, much less.

In spring the wine is drawn off into a clean qvevri. The empty vessel is scrubbed with a brush of cherry bark and lime.
Amber wine
When white grapes ferment and rest on their skins in the qvevri for months, the wine takes on a deep, warm amber colour and a firm, tannic body. Today the world calls such wines “amber” or “orange” wines.
The same white grape - two different wines.
A heritage of humanity
In 2013 UNESCO inscribed the “Ancient Georgian traditional Qvevri wine-making method” on the Representative List of the Intangible Cultural Heritage of Humanity.
The qvevri tradition is about far more than a vessel for making wine. It is a body of knowledge passed down through generations - from selecting the clay and crafting the qvevri to burying it in the ground and caring for it. Alongside this knowledge, a deep respect for the marani is also passed down - a special place in the Georgian home associated with cleanliness, care, and the tradition of hospitality.
